Olive oil is considered as a good source of low cholesterol fatty acids that can be used for cooking. Earlier, when it was not known that cholesterol is harmful to the human body, there used to be products with higher levels of cholesterol contents in it. There are two types of cholesterols that require our attention. They are low density lipoproteins and high density lipoproteins. Proteins are building blocks of the muscle chambers and lipoproteins are the carriers of the water insoluble fats in the blood. Low density lipoproteins are other wise known as saturated fats and the high density lipoproteins are known as unsaturated fats. There are several types of unsaturated fats that are mostly seen in the food products. Trans fats are the harmful compounds of the food products and should be avoided. Meat and several other products related to the animals are good sources of trans fat. Saturated fatty acids are difficult to digests. The excreted fatty acids are re absorbed by the intestines and they are carried to liver for synthesis. Unsaturated fatty acids are the high density lipoproteins which are good for the human body. Essential fatty acids such as vitamins contain this type of lipoproteins.
